Wholewheat Pizza - Bowen Hennis

1 pack yeast
2 C hot water 130*F
½ t sugar
2 C wholewheat flour
2½ + ⅓ C White flour (For the whole wheat flavor, use wholewheat flour instead)
¼ t salt

Pour warm water into a large bowl and add yeast with sugar.
Let stand ~5 min.
Preheat oven to 170'
Once oven is to temperature, keep oven closed and turn it off.
Whisk in the wholewheat flour and salt.
Add 2 C white flour, mixing.
Add remaining flour in three amounts.
Place dough in oven for 10 min. then remove.
Heat oven to 450'.
Sprinkle white flour over dough while lightly kneading the dough till it isn't sticky to the touch and isn't stiff yet.
Separate dough into two equal portions for pizzas.
Spread thin on parchment paper and top as desired (if desired, spread using a very light amount of oil to not have a slight flour taste after baked).
Bake for 12-16 min.
