Strawberry-Glazed Pie
9" pie crust, baked at 425' for 10-15 minutes
1 C water
¼ C strawberry jelly
Scant ¼ C strawberry jello mix
2 3-oz package cream cheese, soft
1 T sugar
2 T orange juice
1 quart fresh, whole strawberries, rinsed and hulled
∙ Heat water and jelly in small, heavy saucepan over high heat till mixture comes to a boil and jelly is melted.
∙ Add jello, stir till dissolved.
∙ Chill in fridge or bowl of ice water till mixture mounds slightly when dropped from a spoon, about 1 hr - 1 hr 15 min.
∙ Beat cream cheese.
∙ Add sugar and orange juice and beat till fluffy.
∙ Spread over bottom of cooled crust.
∙ Arrange berries, pointed ends up, over cheese layer.
∙ Spoon thickened glaze over berries.
∙ Chill several hours or overnight.
∙ Top each serving with a dollop of whipped topping, if desired.
