Rice pudding - Carol White

⅔ C sugar
1 ¼ C rice
1/8 t salt
¼ t nutmeg
2 ½ C milk
1 T margarine
1 t vanilla

∙ Combine in saucepan and bring to boiling.
∙ Cook 20 minutes over low heat stirring frequently.

Beat:
1 egg yolk
2 T milk

∙ Gradually add to hot rice mixture, stirring rapidly.
∙ Remove from heat.
∙ Raisins may be added. Serves 4.
