Rainbow Poke Cake
2 Baked 8" or 9" layer white cakes, cooled
2 pkg (3 oz each) gelatin, any two flavors
2 C boiling water
whipped cream
∙ Place cake layers, top sides up, in 2 clean layer pans.
∙ Prick each cake with utility fork at ½" intervals.
∙ Dissolve each flavor gelatin separately in 1 C boiling water and carefully spoon each over one of the cake layers.
∙ Chill 3-4 hrs.
∙ Dip one cake pan in warm water for 10 seconds to loosen.
∙ Turn out onto serving plate.
∙ Frost with whipped cream.
∙ Unmold second layer cake and place carefully on first layer.
∙ Frost top and sides with whipped cream then chill.
