Pound Cake - Helen Arrington
⅔ C shortening
1 ¼ C sugar
⅔ C milk
1 t lemon extract
2 C flour
1 t salt
½ t baking powder
3 eggs
(opt)
1 ½ t vanilla
3 T cocoa
∙ Cream shortening and sugar till light and fluffy.
∙ Add milk and lemon then blend.
∙ Sift dry ingredients, add to creamed mixture.
∙ Beat till smooth.
∙ Add eggs, one at a time, beating well after each addition.
∙ Beat well before pouring into well-greased loaf pan.
∙ Bake at 300' for 1 hr and 25-30 minutes.
