Potato Pancakes - Eileen Coltart

2 lb potatoes
6 T flour
2 onions, chopped
2 eggs
salt/pepper

∙ Grate raw potatoes, rinse thoroughly.
∙ Mix flour, eggs, onion and seasoning and blend in with potatoes.
∙ Form into thin patties and fry in oil till golden brown and crisp.
∙ Drain on paper towel.
