Potato Boats
6 med-lg potatoes
1 can cream of mushroom soup
½ can milk
1 lb hamburger, browned, drained
salt/pepper
grated cheese
∙ Prepare, bake potatoes at 350' for 45 min.
∙ Cool on cookie sheet long enough to handle.
∙ Cut in half lengthwise and scoop out potato into bowl.
∙ Reserve skin intact, place on cookie sheet.
∙ In bowl, combine potato, soup, milk, hamburger, salt and pepper.
∙ Mix well.
∙ Spoon into potato skins evenly divided.
∙ Top with grated cheese.
∙ Bake again 325' till warmed through and cheese melts.
Variation for casserole:
∙ Cook potatoes any desired method.
∙ Combine with remaining ingredients (including skins if desired) and mix well.
∙ Place in baking dish, top with cheese and bake at 325' till warmed through.
