Pop Overs - Helen Arrington

2 C flour
½ t salt
2 T shortening, melted
4 eggs, beaten
2 C milk

∙ Gradually mix milk into flour and salt.
∙ Add shortening and eggs.
∙ Beat 2 min at high speed.
∙ Fill greased muffin tin ⅔ full.
∙ Bake at 450' 30 min then reduce heat to 350' for 10 min more.
∙ DO NOT OPEN OVEN UNTIL DONE!!!
∙ ½ recipe makes 8.
