Pineapple Muffins - Helen Arrington

2 ½ C flour
½ t salt
¼ C sugar
4 t baking powder
¼ C shortening, melted
1 egg
1 C milk
7 oz can crushed pineapple, drained

∙ Combine dry ingredients.
∙ Combine egg, milk, and shortening.
∙ Add wet ingredients to dry ingredients stirring just till blended.
∙ Stir in pineapple.
∙ Spoon into greased muffin tin ⅔ full.
∙ Bake at 425' 20-25 min.

∙ DON'T use cupcake papers--they'll stick.
