Oatmeal Muffins - Helen Arrington

2 C oatmeal
2 T sugar
¾ t baking soda
1 egg, beaten
2 t shortening, melted
1 C flour
½ t salt
1 ¼ t baking powder
1 ½ C sour milk

∙ Soak oats in sour milk (best if overnight, but not necessary).
∙ Sift dry ingredients together.
∙ Beat egg and add all ingredients to oats and milk.
∙ Mix just till damp.
∙ Fill greased muffin tin ⅔ full.
∙ Bake at 400' 25 min.
∙ Makes 12
