Linda's Lemon Poppy Seed Muffins - Sarah Schulz
Mix and set aside:
2 C flour
½ t salt
1 T baking powder
½ C sugar or small pkg JellO
Mix well:
2 eggs
½ C oil
1 T poppy seed (T. Hennis-I half it)
½ C milk
½ t lemon extract
∙ Combine wet and dry ingredients.
∙ Barely mix them.
∙ Fill greased muffin tin ⅔ full.
∙ Bake at 400' 15-20 min.
∙ Makes 12 muffins.
