Lemon Crisps

1 C shortening
½ C sugar
½ C brown sugar
1 egg
1 t grated lemon rind
2 ½ C sifted flour
¼ t salt
¼ t baking soda
2 T lemon juice

∙ Preheat oven to 400'
∙ Cream shortening and gradually add sugar and lemon juice creaming well.
∙ Add egg and grated lemon rind.
∙ Sift flour, salt and baking soda then add to creamed mixture a little at a time.
∙ Form into cookies on ungreased aluminum cookie sheets.
∙ Bake 10-12 minutes.
∙ Makes 7 dozen.
