Eclair Cake - No Bake
Filling:
3 boxes 3.5 oz instant vanilla pudding
3 C milk
1 container 8 oz cool whip
1-2 box(s) Graham crackers
Topping:
⅓ C cocoa powder
1 C sugar
¼ C milk
1 Stick butter (½ C)
1 t vanilla extract
Filling and Layers:
∙ Combine pudding mix & milk then beat till combined well.
∙ Stir in Cool Whip.
∙ Place a layer of graham crackers in bottom of 9x13 dish.
∙ Spread 1/2 filling mixture on top.
∙ Repeat with another layer of graham crackers.
∙ Add the rest of the filling.
∙ Top with final layer of graham crackers.
Topping:
∙ Bring cocoa, milk & sugar to a rolling boil for a full minute, stirring frequently.
∙ Remove from heat, cool 1 minute.
∙ Add butter & vanilla, stir till butter is melted.
∙ Pour chocolate topping over graham crackers.
∙ Refrigerate overnight.
