Crazy Crust Cherry Pie
1 C flour
2 T sugar
1 t baking powder
½ t salt
¾ C water
⅔ C shortening
1 egg
Filling:
1 can (1 lb 5 oz) cherry pie filling
∙ In small mixer bowl, combine flour, sugar, baking powder, salt, water, shortening and egg.
∙ Blend well at low speed.
∙ Beat 2 minutes at medium speed.
∙ Spread batter in 10" pie pan or in 9" deep dish pie pan.
∙ Carefully spoon filling in center of batter, DO NOT STIR.
∙ Bake at 425' for 35-40 minutes or till golden brown.
