Corn Chowder - Helen Arrington
Cook together 10 min:
4 C potatoes, diced
2 C water, lightly salted
∙ Meanwhile, fry 5 slices bacon.
∙ Reduce heat and sauté ¼ C diced onion.
∙ Add to potatoes:
∙ 1 can creamed corn
∙ cooked bacon and onion
∙ Simmer 5 min.
∙ Add:
2 C milk
1 t paprika
1 t sugar
1 t salt
dash pepper
∙ Heat and serve.
∙ Flavor improves the longer it sits before serving.
