Coconut Cherry Chews

1 C Coconut
2 t almond extract
1 egg
1 T water
1 egg white, beaten
1 to 1 ½ C coconut
Red candied cherries, halved

∙ Heat oven to 375'.
∙ Grease cookie sheets.
∙ In large bowl, combine mix, 1 cup coconut, almond extract and egg at low speed until well blended and dough forms.
∙ In small bowl, combine water and egg white.
∙ Shape dough into 1-inch balls; dip in egg white mixture; roll in coconut.
∙ Place 2 inches apart on prepared cookie sheets.
∙ Place cherry in center of each cookie, pressing down lightly.
∙ Bake at 375' for 11 to 14 minutes or until edges are light golden brown.
∙ 3 dozen cookies.
