Coconut Candy Eggs
2 C fine-Grated or flaked coconut
1 pkg gelatin, any flavor/color
1 C grated blanched almonds
⅔ C sweetened condensed milk (not evaporated)
1 ½ t sugar
½ t almond extract
∙ Combine all ingredients into bowl and mix well.
∙ Shape into 1 big egg OR 24 medium eggs OR 12 dozen jelly bean eggs.
∙ Chill until firm and dried on outside.
∙ If desired, coat with the following chocolate glaze
∙ Melt 1 C (6 oz pkg) chocolate chips with 2 T water over hot water and stir until smooth.
∙ Leave over hot water and if necessary, add additional ¼ t water.
∙ Spread over big egg or dip medium eggs one at a time holding with 2 forks.
∙ Decorate with powdered sugar frosting if you like.
∙ Let stand until chocolate is firm about 4 to 5 hours.
∙ Makes 1 large egg, 24 medium eggs, or 12 dozen tiny eggs.
