Chocolate-Orange Marble Cheesecake
½ C graham cracker crumbs
1 T sugar
2 T butter or margarine, melted
1 square unsweetened chocolate, melted
3 pkg (8 oz each) cream cheese, softened
¾ C firmly-packed light brown sugar
¼ C sugar
4 eggs
2 pints (4 C) sour cream
1 T grated orange rind
6 squares semisweet chocolate, melted and cooled
∙ Preheat oven to 350'
∙ Combine crumbs, the 1 T sugar, butter and unsweetened chocolate in small bowl.
∙ Press into bottom of lightly buttered 8x3" spring form pan and refrigerate
∙ Beat cream cheese in large bowl until smooth.
∙ Gradually beat in sugars until well mixed.
∙ Beat in eggs, one at a time, until fluffy.
∙ Beat in sour cream and rind then reserve 3 C.
∙ Beat cooled chocolate into remaining cream cheese mixture until well mixed.
∙ Spoon 1 C of the reserved plain cheese mixture over crust in pan. Spoon half the chocolate-cheese mixture in 4 separate mounds over plain cheese layer.
∙ Cover with another cup of the reserved plain cheese mixture and repeat layers.
∙ Cut through batter with zigzag motion to marble.
∙ Bake in preheated oven for 1 hr then turn off oven and leave in oven 1 hr.
∙ Cool on rack then refrigerate overnight.
∙ Remove from pan and decorate with orange slices and chocolate leaves, if you wish.
∙ Makes 16 servings at 39 cents each.
