Chicken Barley Chili

Step 1:
14 ½ oz can diced tomatoes, undrained
16 oz salsa or tomato sauce
2 C chicken broth
1 C quick barley
3 C water
1 T chili powder
1 t cumin

Step 2:
15 oz can black beans, drained, rinsed
15 oz can corn, undrained
3 C chicken pieces, cooked

∙ In large saucepan, combine the first set of ingredients.
∙ Bring to boil over high heat, cover and reduce heat to low.
∙ Simmer 20 min, stirring occasionally.
∙ Add beans, corn and chicken, increase heat to high till chili comes to a boil.
∙ Cover, reduce heat to low and simmer 5 minutes more or till barley is tender.
∙ May add more water to desired consistency.
