Carrot Cake - LaRue Lang (Fixed by Cally Velasquez)

Sift together in a large bowl:
2 C sugar
2 C flour
2 t baking powder (or baking soda if it's new)
1 t salt
2 t cinnamon
1 ½ C vegetable oil
4 eggs
3 C grated carrots
1 C chopped nuts(opt.)
1 C raisins(opt.)

∙ Sift sugar, flour, baking powder, salt and cinnamon in a large bowl.
∙ Add oil and beat until well mixed.
∙ Add eggs one at a time mixing well after each one.
∙ Add by hand carrots, nuts and raisins.
∙ Bake at 350' for 40-50 minutes in a 9x13 pan or Bundt cake pan.

Frosting:

1 lb box powdered sugar
8 oz pkg cream cheese
¼ C butter
2 t vanilla

∙ Blend and chill for 5 minutes then frost cake.
