Banana Fritters
1 C flour
1 t baking powder
1 t salt
1 t sugar
2 eggs
⅓ C milk
1 t Oil
5 bananas
Powdered sugar
∙ Sift flour, baking powder, salt and sugar into mixing bowl.
∙ Beat eggs well then beat in milk and 1 t oil.
∙ Combine liquids with dry ingredients.
∙ Stir till flour is moistened.
∙ Don't beat.
∙ Slice bananas in half lengthwise and half again crosswise.
∙ Dip banana slices in batter.
∙ shake off excess.
∙ Drop into 1" oil heated to 375'.
∙ Fry till golden on both sides, less than 5 minutes on each side.
∙ Drain and dust with powdered sugar before serving.
∙ Makes 5 servings.
