Applesauce Muffins

2 C flour

1 T baking powder

½ t salt

1 C sugar

½ t cinnamon

½ t nutmeg

½ C shortening

2 eggs, beaten

1 C applesauce

1 C nuts, chopped (opt)

∙ Cream shortening and sugar.

∙ Stir in eggs, and applesauce.

∙ Sift dry ingredients and blend into wet mixture.

∙ Fold in nuts.

∙ Spoon into greased muffin tin.

∙ Bake at 375' 20-25 min

∙ Makes 24-30 med muffins.
