Applesauce Cake - Aunt Joan Arrington
*(2) 1 ⅓ C sugar
*(1) ⅔ C oil
*(4) 2 ⅔ C applesauce, heated
*(4 ½) 2 ⅔ C flour
*(2) 1 ⅓ T cocoa
*(4) 2 ⅔ t baking soda
*(2) 1 ⅓ t cinnamon
*(1) ¾ t salt
1 C raisons
1 C nuts
∙ Blend sugar and oil.
∙ Stir in applesauce, blending well.
∙ Sift flour, cocoa, baking soda, cinnamon and salt.
∙ Stir flour mixture into applesauce, blend well.
∙ Stir in raisons and nuts.
∙ Pour into greased and floured 9x13 pan.
∙ Bake at 350' for 50 minutes
∙ *Use larger amounts to make an additional 8x8 square cake.
∙ Frost with creamy frosting.
Creamy Frosting:
1 C milk
2 T cornstarch
½ C margarine
½ C shortening
¾ C sugar
1 t vanilla
∙ In saucepan, Stir together milk and cornstarch.
∙ Bring to boil over low heat, stirring constantly.
∙ When mixture starts to thicken, remove from heat and set aside to cool.
∙ In mixing bowl, blend margarine and shortening.
∙ Add the cooled milk mixture and blend well.
∙ Ad vanilla and beat till smooth and fluffy.
∙ Frost cooled applesauce cake.
