Apple Bread

1 C sugar
½ C shortening
2 eggs
1 t vanilla
2 C flour
1 t baking powder
1 t baking soda
½ t salt
2 C apples, pared, chopped (about 4 med)
½ C nuts, chopped
1 T sugar
¼ t cinnamon

∙ Cream sugar, shortening, eggs, and vanilla.
∙ Stir in flour, baking powder, baking soda, and salt till smooth
∙ Stir in apples and nuts.
∙ Spread in greased and floured 9x5x3 loaf pan.
∙ Mix 1 T sugar and cinnamon and sprinkle over batter.
∙ Bake at 350' 50-60 min.

∙ High altitude (3500-6500 ft.):
∙ Decrease 1 C sugar to ¾ C
∙ Decrease 1 t baking powder to ¾ t.
∙ Bake at 375'
